The melody of the ice cream truck coming down our street always found us kids begging Mom for something cool on a hot summer day. The sweet treats found on the truck were not so nutritious, but fun all the same. Here’s an alternative that includes good-for-you ingredients. You will just have to hum your own tune as you open the freezer.
Strawberry Banana Popsicles
Ingredients
- 12 large strawberries, sliced
- 1 large banana, peeled
- ½ cup pineapple juice
Special Equipment
- Popsicle mold
Directions
- Blend all ingredients together on high speed until smooth. Scrape down the sides of the blender as needed as you go.
- Pour the mixture into popsicle molds. Freeze for 2 hours, then put a wooden popsicle stick in the middle. Continue to freeze for an additional 6 hours or overnight.
- Run popsicle molds under warm water to easily remove.
- Enjoy!
Try other fruits and juices. The method’s the same. The outcome—a fun and nutritious way reminder of summers passed.
